James O'Connell and family

I am searching for any information or stories regarding James O’Connell, who was married to Johanna McCarthy. James immigrated from County Cork, Ireland about 1841 and settled in Havelock. They are my husbands 2x great grandparents. It appears James received at least two land grants (1847 & 1852) and was a farmer. I am curious what he might have farmed? 
They had eight children, (but I can't find any baptism or birth records) all but two made their way to Seattle. One son, James D. (J.D.), was referred to as the Summer or Winter Santa Claus and I can find a bit of information on him in newspapers, but not so much on his parents. The children attended the Lower Ridge School.
